Appe (Fermented Rice dumpling)
Ingredients:
1 cup raw rice (dosa/idli rice)
¼ cup urad dal (black gram)
½ cup puffed rice (poha)
Salt to taste
(for seasoning)
1 Chopped onion
1 Green Chilly chopped
A few curry leaves finely chopped
Method:
Wash rice and dal and soak it for 5 to 6 hours
Drain the water and add puffed rice to the drained water and soak it for 10 minutes.
Grind the rice, dal, puffed rice and salt to a fine thick batter. Add the seasoning to the batter.
Heat a dented pan (shown in the picture) and apply a little oil.
Fill the dents in the pan with ¾ batter in each dent.
Cover and cook it for a few minutes and turn the dumplings in the pan.
The appes (dumplings) are ready to serve with coconut chutney.
